Day 1, Bread 1: 100% Whole Wheat


What do we want? We want a 100% whole grain bread with no added sugar, honey, or sweetener of any kind. We want it to serve well as a bread for toasting, as a vehicle for butter, and to occasionally service as sandwich bread. Oh, and we want it to taste great. Too much to ask? Wait! We also don't like sourdough - so none of that. Let the quest begin...

We decided to start with the 100% whole wheat recipe from DOUGH. It involves a ferment which helps lighten the dense bread but doesn't make it sour.

The bread did well in many respects. It had a crunchy crust and soft middle. It wasn't too dense. It didn't have big air pockets through you could lose your sandwich insides. It looked nice.

Where it needs work is in the taste department primarily... It had a slight, funny aftertaste and it was a little boring.

The next attempt will start with this base but include some quinoa flour. I want a crunchy, interesting top of oast and seeds, but we don't have any on hand and already ate all of the first batch... Next time!
